To us, “artisanal” and “mezcal” are inseparable. Mezcal is born of time and patience. We take great care with each step of the process, honoring the details and embracing the nuance of a truly handcrafted spirit.
We source and hand-select every agave. Our 4th generation maestro mezcalero uses only traditional means. He slowly roasts each batch of agave over a wood fire, crushes the agave with a horse-pulled stone wheel (tahona), open-air ferments the mash in small tanks and distills our mezcal twice in small copper pots. We hand-label and number each bottle and batch.
